For me, this is a good way to get in more vegetables. It won’t seem like you are eating lots of veg in this dish but the entire base of it is cauliflower so it’s an awesome way to sneak it in 🙂 especially if you are having a hard time enjoying veggies.
You will need:
- 1 medium cauliflower
- 2 tbsp coconut oil (or fat of choice)
- small onion
- 1/2 cup full fat coconut milk
- 1 cup fresh pineapple
- 1 scallion
- black pepper + salt
Melt coconut oil and saute onion with a pinch of salt. While this is sauteing, I like to use my food processor to pulse the cauliflower into small rice sized pieces.
Once onion is translucent, add the cauliflower and coconut milk.
Cover and cook for about 5-10 mins or until the “rice” has soaked up the coconut milk.
Transfer to a large bowl and add the pineapple and scallion. Enjoy!!!!!!!!!!!!!!!! I love the pineapple in this dish.
