Tuna and Yam “Crackers”

I’ve been brainstorming a few things I could make with my new-found mayo stock!!! (so good)

Today we were browsing Costco and we got a bulk pack of tuna, I actually love tuna and mayo so I got pretty excited all over again about having this mayo recipe. I still had most of it in the fridge from when I made it a few days ago and it only lasts about a week due to no preservatives so I wanted to use it before it goes bad!

I peeled one large yam and cut it into circles. Baked in the oven at 350 for 20 ish mins(?) flipped over about half way. I would recommend baking for longer if you want a crispier “cracker”.

This was something we just thought up! Usually get my ideas from instagram or cookbooks but this kind of came to us while in costco and we couldn’t wait to get home and put it together.

I added cucumber (from the farmers market) to the tuna salad and topped with micro greens aka mixed sprouts (also from the farmers market).

This was soooo yummy!!! Totally hit the spot and I could have eaten 100 but it was the perfect snack. I also spread a bit of leftover spicy sauce on mine.
